INGREDIENTS:
200g Alannah’s Mediterranean Classic Hommus with Pine Nuts & Olive Oil
600g Beef mince
½ cup Green olives, roughly chopped
¼ cup Currants
2 tbsp Moroccan spice
1 Lemon, zest and juice
4 Garlic pita pockets
2 Tomatoes, diced
½ Telegraph cucumber, halved lengthways and thinly sliced
1 Red capsicum, diced
¼ Iceberg lettuce, thinly sliced
⅓ cup Plain unsweetened yoghurt
2 tbsp Olive oil
1 handful Fresh parsley, finely chopped
½ handful Fresh mint, chopped
2 cloves of Garlic, crushed
SERVES: 4 | PREP: 15 minutes | COOK: 20 minutes
Step 1
Place the beef mince, olives, currants, Moroccan spice and lemon zest in a bowl and mix with your hands until everything is well combined. Divide the mixture into golf ball sized balls.
Step 2
Slice the pita breads horizontally so they open up slightly to form a ‘pocket’.
Step 3
Heat a large frying pan or BBQ grill over medium-high heat. Fry or grill the pita breads for about 1 minute each side, until warmed through and slightly charred. Set aside and cover with a clean tea towel to keep warm.
Step 4
Brush the kofta with half of the oil and BBQ or pan-fry for 10 minutes over a medium heat, turning a few times, until cooked through – break one apart to check the inside is no longer pink.
Step 5
Place the tomatoes, cucumber, capsicum, lettuce, parsley, remaining olive oil, lemon juice and a pinch of salt and pepper in a large bowl and toss well to combine.
Step 6
Mix the yoghurt, mint and garlic together and season to taste with salt.
Step 7
Stuff the pita pockets with the hummus, kofta and salad, or simply serve all together on a plate, drizzle with the garlic yoghurt.
👩🏻🍳CHEF’s TIP
Leave the olives out of the kofta if you prefer.
You could substitute the currants with some chopped raisins or sultanas.
Use cos or another crunchy lettuce instead of iceberg.
If you can’t get garlic pitas, just buy regular pitas.
To make this dairy-free buy plain pita bread. To make them gluten-free buy gf pita bread.
