Chicken Shawarma Tray Bake
Golden, spice-roasted chicken meets vibrant vegetables and creamy hommus in this effortless shawarma tray bake.
A one-pan wonder layered with warm Middle Eastern spices, fresh textures and bold flavour—perfect for relaxed entertaining or easy midweek dinners.
INGREDIENTS:
4 tbsp Alannah’s Mediterranean Classic Hommus with Pine Nuts & Olive Oil
600g Chicken thigh fillets (skinless), roughly chopped
1 tsp Ground turmeric
1 Red onion, cut into wedges
2 Capsicums, sliced
2 Zucchinis, sliced into rounds
3 Pita pockets
4 tbsp Greek yoghurt
1 lemon, cut into wedges
2 tbsp Olive oil
2 tsp Ground cumin
2 tsp Paprika
1½ tsp Ground coriander
1 tsp Ground cinnamon
2 Cloves of garlic, crushed
½ tsp Chilli flakes
1 Handful Fresh parsley, chopped
SERVES: 4 | PREP: 15 minutes | COOK: 30 minutes
Step 1
In a large bowl, combine the olive oil, spices, lemon juice, salt and pepper. Add the chicken and toss to coat. Let it marinate for at least 15 minutes (or up to 24 hours in the fridge if you’re prepping ahead).
Step 2
Heat the oven to 200°C (fan 180°C). Line a large shallow oven tray with baking paper.
Step 3
Spread the onion, capsicum, and zucchini in a single layer in the tray. Drizzle with olive oil, season with salt and pepper, and toss to coat. Arrange the marinated chicken on top of the vegetables.
Step 4
Bake for 25–30 minutes, flipping halfway through, until the chicken is golden and cooked through and the veg is tender and slightly caramelised at the edges.
Step 5
When the chicken and vegetables are almost cooked, wrap the pita in foil and warm in the oven for 5-10 minutes.
Step 6
Top with dollop of yoghurt and hummus, sprinkle with parsley and squeeze over some lemon juice. Chop the pita into wedges and serve alongside.

Add in whatever other vegetables you may have on hand, such as mushrooms, carrot sticks, cauliflower etc... You can also add in a can of chickpeas.
